This week we tried another new recipe and it was delicious so I thought I would share (of course), so here is what’s for dinner.
Chipotle Pork Quesadillas

2 pork chops (about 3/4 lb)
3 TBL Extra virgin olive oil
1/2 onion chopped
1 cup canned diced tomatoes
3 cloves garlic, minced
1 chipotle chili in adobo sauce
1/2 tsp ground cumin
1 package medium tortillas
1 cup shredded monterey jack cheese
Preheat the oven to 350, season the pork with salt and pepper. Heat a large skillet over medium high heat with olive oil. Add the pork and cook until browned, about 4 minutes on each side. Remove from pan, let cool and then cut into strips. Add to the skillet onion and cook until brown. Then add tomatoes and their juice, garlic, chipotle and cumin. Cook over medium-high heat, stirring until thickened, about 3 minutes then stir in pork. Heat a grill pan over medium heat (or a regular pan) add 1 tsp olive oil and cook tortillas one at a time until golden, 1-2 minutes. Divide the pork mixture among half the tortillas, sprinkle with cheese and top with another tortilla. Place on a baking sheet and bake for 10 minutes until cheese is melted. Cut into wedges and serve.
