I LOVE pasta and rice is not as high on my list of favorites, I don’t dislike it I just prefer pasta. The problem is my husband prefers rice and I really am not good at making dishes with rice in them, sadly I end up using one of those pre-packed mixes that are not exactly healthy. Minute Rice sent me some of their instant whole grain brown rice to try out and I was stumped as to what to do with it. Then I had the brilliant idea to turn the box over and try one of the recipes on the back. I made the Southwestern Chicken Skillet and it was delicious. Not only did we love it but it was quick, easy and cheap. I had all the ingredients on hand and I made a double batch enough to feed 8 adults for $5. I definitely will be keeping Minute Rice in my cupboard from now on and there are still 2 more recipes on the back I want to try.
