Linguine with Red Clam Sauce

This is one of my favorite meatless recipes, it is delicious and spicy and super easy to make, plus even the kids will eat it since it looks like spaghetti. Plus you can have the ingredients on hand all week no need to run out or last minute items.

Linguine with Red Clam sauce

1 pound linguine
3 TBL extra virgin olive oil
1/2 TSP red pepper flakes
1/4 TSP dried oregano leaves
1 TSP dried Thyme
5 -6 cloves garlic
1 small onion diced
1/2 cup dry red wine ( Aldi’s $3.99)
2 14 oz. cans whole baby clams
1 28 oz. can crushed tomatoes
salt
black pepper
zest of 1 lemon

Bring a pot of water to boil and cook noodles according to package. In a large skillet on med-low add olive oil, red pepper flakes, oregano, thyme and garlic. Cook for a minute then add onions and cook until soft. Add wine and cook for another minute then add clams keeping juice from one can. Cook for another minute then add tomatoes seasoning with salt and pepper. Drain linguine and add to sauce. Add in zest of lemon, toss to coat and serve.
