How to Make Easy Mini Pumpkin Cakes for Halloween

 

These mini pumpkin cakes could not be simpler to make and they are super cute. All you need is:

  • 1 package spice cake mix plus ingredients called for
  • 1 can of frosting
  • pretzel rod bites
  • mini bundt cake pan

Make the spice cake according to the directions on the package and cook in mini bundt cake pan at 350 for 15-20 minutes.

When the cakes cool remove from pan and cut to level the bottoms.

Using frosting as glue place one mini bundt cake on top of the other with bottoms glued together by the frosting.

Cover the pumpkin in frosting, use a spatula to make the ridges by dragging it from bottom to top.

Add pretzel in the hole in the middle for stem and add a face with black frosting if desired.

 

* To vary the size and shape you can also use the Wilton Ball pan to make pumpkins following the same instructions.

I first saw this idea in my current issue of Family Circle Magazine, they use a different recipe but the idea is the same.
